With the arrival of autumn, Amarines by Mauro Colagreco unveils a new menu, designed as a tribute to seasonal products and Mediterranean flavors. Three-Michelin-starred Chef Mauro Colagreco and his team present a creative cuisine where nature finds its place in every dish. The wild mushroom stew, the blueberry pigeon with spelt risotto, embody this autumnal symphony, rich in colors and emotions.

The Mediterranean remains the common thread, with sea-inspired plates such as wild fish smoked over olive wood, while meats—like the Alpilles lamb roasted with herbs—celebrate the generosity of the land.
For dessert, poetry continues with a crème brûlée infused with cacao nibs, Tahitian vanilla, cassia bark, and licorice, bringing the culinary journey to a delicate and refined close.
